Vanilla Ice Cream
Ingredients
- thick milk-3 1/2cups
- milk powder-4 tblsp
- fresh cream-250 ml
- sugar-9 tblsp
- salt-a pinch
- CMC-1 tsp
- GMS-1 TSP
- gelatine-1 tblsp
- liquid glucose-1 tblsp
- vanilla essence-1 tsp
Method
- dissolve CMC and GMS in one cup water and cook till it looks like starch and cool.
- pour hot water over gelatine till it dissolves
- keep 3 cup of milk on fire and cook for 5 minutes
- in 1/2 cup milk dissolve,sugar and milk powder add to the boiling milk ,cook on low flame,till thick for 5 minutes ,
- now add cooled GMS and CMC PASTE with liquid glucose,gelatin,cook till thick
- cool add vanilla essence.
- transfer the mixture into ice cream box and freeze. for 8 hours at highest temperature.
- remove from freezer and beat little at a time
- lastly add cream ,beat slowly.
- transfer onto the ice cream box and keep in the freezer.cover with plastic sheet or cling film.
- freeze till firm.
variations
Mango ice cream
can add yellow colour and mango essence or
- repeat the ingredients as mentioned for vanilla
- while beating 2nd time add 1 1/2 cup mango fruit pulp and few drops of mango essence to the mixture and beat well
- do not add vanilla essence
- serve decorated with mango pieces
strawberry ice cream
- add 5 to 7 -drops of strawberry essence and 1 tsp of red strawberry colour while beating 2nd time.
raspberry ice cream
- pink colour and rasberry essence.
butter scotch ice cream
- butter scotch essence and yellow colour
pineapple ice cream
- pineaple essence and yellow colour
