Vanilla Ice Cream


  1. thick milk-3 1/2cups
  2. milk powder-4 tblsp
  3. fresh cream-250 ml
  4. sugar-9 tblsp
  5. salt-a pinch
  6. CMC-1 tsp
  7. GMS-1 TSP
  8. gelatine-1 tblsp
  9. liquid glucose-1 tblsp
  10. vanilla essence-1 tsp


  1. dissolve CMC and GMS in one cup water and cook till it looks like starch and cool.
  2. pour hot water over gelatine till it dissolves
  3. keep 3 cup of milk on fire and cook for 5 minutes
  4. in 1/2 cup milk dissolve,sugar and milk powder add to the boiling milk ,cook on low flame,till thick for 5 minutes ,
  5. now add cooled GMS and CMC PASTE with liquid glucose,gelatin,cook till thick
  6. cool add vanilla essence.
  7. transfer the mixture into ice cream box and freeze. for 8 hours at highest temperature.
  8. remove from freezer and beat little at a time
  9. lastly add cream ,beat slowly.
  10. transfer onto the ice cream box and keep in the freezer.cover with plastic sheet or cling film.
  11. freeze till firm.


Mango ice cream

can add yellow colour and mango essence or

  1. repeat the ingredients as mentioned for vanilla
  2. while beating 2nd time add 1 1/2 cup mango fruit pulp and few drops of mango essence to the mixture and beat well
  3. do not add vanilla essence
  4. serve decorated with mango pieces

strawberry ice cream

  1. add 5 to 7 -drops of strawberry essence and 1 tsp of red strawberry colour while beating 2nd time.

raspberry ice cream

  1. pink colour and rasberry essence.

butter scotch ice cream

  1. butter scotch essence and yellow colour

pineapple ice cream

  1. pineaple essence and yellow colour
