1. maida-1 cup
  2. baking powder or cooking soda-1/4 tsp
  3. refined oil or dalda-2 tblsp
  4. salt-1/2 tsp
  5. ajawain(om seeds)-1/4 tsp(powdered)
  6. ice cold water to mix the dough

oil-for deep frying


  1. sieve maida with baking powder and salt.
  2. blend oil to flour,mix well with hand.
  3. sprinkle cold water and knead to a stiff dough.,till elastic and pliable
  4. keep closed for some time for 15 to 30 minutes


  1. boiled and mashed aloo-4
  2. cooked peas-1 cup
  3. cooked and finely cut-beans and carrot-little
  4. aniseed(sompu)-1/2 tsp
  5. jeera seeds-1/2 tsp
  6. dhania powder-1 tblsp
  7. jeera powder-1 tsp
  8. amchur powder-1 tsp
  9. black pepper powder-1/2 tsp
  10. turmeric powder-1/4 tsp
  11. kala namak-1/2 tsp
  12. garam masala powder-1/2 tsp
  13. salt- to taste
  14. red chilli powder-1/2 tsp


  1. heat oil in a kadai,add jeera seeds,and other vegetables.
  2. add all the other ingredients one by one,fry well,till moisture evaporates. and prepare the palya

method for making samosa

  1. make small balls from the dough
  2. roll it into circles(like puris)of medium thick
  3. cut into two in the centre
  4. place little fillng in the centre of one piece
  5. apply little water around the edges
  6. fold straight lined edges to the centre to form a cone
  7. seal over lapping edges with water
  8. press all the edges well
  9. prepare all samosas in the same way.
  10. heat oil in a kadai,fry few samosas at a time,in medium flame,till crisp and brown.
