Rich Butter Cake

ingredients

1. maida-2 cups
2. baking powder-1 1/2 tsp
3. butter-3/4 cup
4. powdered sugar-1 cup
5. eggs-3
6. milk-3 tblsp

method

1. sift maida,and baking powder.
2. place butter and sugar in a bowl,beat well until light and fluffy.
3. add eggs gradually,beating well after each addition.
4. mix in half the maida and milk ,combine well beating all the time.
5. add remaining maida and milk and beat well.
6. pour into a buttered and floured baking cake tin,and bake in a moderate oven for 1 hour or cake springsback when touched lightly.

variations

walnut butter cake

add 1 tsp mixed spice and 1 1/2 cup finely chopped walnuts to the mixture.

orange butter cake

substitute orange juice for the milk and add the grated rind of 1 orange

cherry butter cake

add 1/2 cup slicrd glace cherries to the mixture .

tutti-fruitty butter cake

add 1/2 cup tutti- fruitty pieces to the mixture
