Rainbow Cake
ingredients
- eggs-4
- powdered sugar-1 cup
- maida-2 cups
- baking powder-2 tsp
- salt-a pinch
- butter-1/4 cup
- hot milk-1 cup
- vanilla essence-1 tsp
- pink food colouring-3-4 drops
- cocoa powder-2 tblsp
- warm milk-2 tblsp
butter vanilla icing
method
- beat the eggs,gradually add the powdered sugar and then beat for 10 minutes.
- sift maida,salt,baking powder together and add to the egg batter and beat well
- melt butter in hot milk,add vanilla essence,fold in lightly but thoroughly.
- divide into 3 equal parts,add pink colouring to one portion.
- mix cocoa powder with 2 tblsps of warm milk,add to the 2nd portion
- and leave the 3rd portion plain.
- pour mixture into buttered and floured 3 sandwitch or cake tins
- bake in a moderate oven for 25 to 30 minutes or until done when tested
- care fully turn out on to a rack
- when cold,join the cakes together with the butter icing,using chocolate layer as the base,plain layer next and pink one on top.
- spread icing over top .
