Rainbow Cake


  1. eggs-4
  2. powdered sugar-1 cup
  3. maida-2 cups
  4. baking powder-2 tsp
  5. salt-a pinch
  6. butter-1/4 cup
  7. hot milk-1 cup
  8. vanilla essence-1 tsp
  9. pink food colouring-3-4 drops
  10. cocoa powder-2 tblsp
  11. warm milk-2 tblsp

  1. beat the eggs,gradually add the powdered sugar and then beat for 10 minutes.
  2. sift maida,salt,baking powder together and add to the egg batter and beat well
  3. melt butter in hot milk,add vanilla essence,fold in lightly but thoroughly.
  4. divide into 3 equal parts,add pink colouring to one portion.
  5. mix cocoa powder with 2 tblsps of warm milk,add to the 2nd portion
  6. and leave the 3rd portion plain.
  7. pour mixture into buttered and floured 3 sandwitch or cake tins
  8. bake in a moderate oven for 25 to 30 minutes or until done when tested
  9. care fully turn out on to a rack
  10. when cold,join the cakes together with the butter icing,using chocolate layer as the base,plain layer next and pink one on top.
  11. spread icing over top .
