Pista Ice Cream


  1. thick milk-3 1/2 cup
  2. sugar-9 tblsp
  3. fresh cream-250 gms
  4. pista(chopped)-2 tblsp
  5. gelatin-1 tsp
  6. CMC and GMS-1 tsp each
  7. liquid glucose-1 tblsp
  8. pista essence-1 tsp
  9. green colour-1 pinch
  10. milk powder-4 tblsp
  11. pista paste-1/4 cup


  1. dissolve CMC and GMS in 1 cup of water and cook till it looks like starch and cool.
  2. heat 3 cups of milk and cook for 5 minutes,and in rest of 1/2 cup milk dissolve sugar and milk powder add to the boiling milk and cook for 5 minutes.
  3. now add cooled CMC and GMS paste,gelatin(soaked in hot water),with liquid glucose,cook till thick.
  4. add pista paste,colour and essence.
  5. cool the mixture.
  6. pour into the ice-cream box and keep in the freezer to set for 8 hours at highest temperature.
  7. take out the box .beat a little at a time .
  8. lastly add cream ,beat slowly.transfer into the ice cream box and keep in the freezer to set at medium temperature.
  9. cover the box with cling film or plastic sheet.
