Pineapple Melba


  1. milk-2 cups
  2. condensed milk-1/2 can
  3. powdered sugar-1 tblsp
  4. pineapple pieces-1/2 (small can)
  5. pineapple jam-1 1/2 tblsp
  6. pineapple essence-1/2 tsp
  7. GMS and CMC-1 TSP each
  8. liquid glucose-1 tblsp


  1. dissolve CMC and GMS in one cup water and cook till it looks like starch and cool
  2. mix together milk,sugar,condensed milk,1 1/2 rings of pineapple,and essence ,beat well,add above mix, along with liquid glucose beat.
  3. keep it in the freezer to set.
  4. when half set take out and again beat and keep it back in the freezer to set firm
  5. now cut the left rings of pineapple into small pieces
  6. add 2 tsps of water to the pineapple jam and warm up slowly until it melts
  7. To serve put a scoop of the ice cream in each bowl and cover with pineapple pieces,and a little syrup.put 1 tsp of the prepared jam sauce on top


for the softer ice cream add 1 egg white beated till creamy
