Pineapple Juice
Ingredients
- pineapple juice-2 1/2 cups or 1 litre
- sugar-3 1/2 cups or 1.700gms
- water-3 cups or 1.300 ml
- citric acid-2 1/2 tsp or 6 tsps
- pineapple essence-2 tsps
- lemon yellow colour-1 pinch or 1/4 tsps
- potasium meta bi sulphate(K. M. S)-2 Pinches
Method
- select fully ripe juicy fruit,wash well
- remove outer skin using a sharp clean knife.
- remove centre hard core .
- chop into pieces and put in a mixie or grate it using a clean grater.
- squeeze the pulp through a clean muslin cloth.
- heat the juice to boiling point and cool completly.
For the sugar syrup
- heat sugar ,water and citric acid,to boiling point,filter it through a muslin cloth and cool it to room temperature,

- mix the juice,sugar syrup,colour,essence together.
- mix the preservative in little warm water and add to the juice
- pour into sterlized, dry bottles leaving 1 inch head space.
Note
- to serve add 1 part of juice to 3 parts of ice cold or ordinary
water
