Pineapple Juice


  1. pineapple juice-2 1/2 cups or 1 litre
  2. sugar-3 1/2 cups or 1.700gms
  3. water-3 cups or 1.300 ml
  4. citric acid-2 1/2 tsp or 6 tsps
  5. pineapple essence-2 tsps
  6. lemon yellow colour-1 pinch or 1/4 tsps
  7. potasium meta bi sulphate(K. M. S)-2 Pinches


  1. select fully ripe juicy fruit,wash well
  2. remove outer skin using a sharp clean knife.
  3. remove centre hard core .
  4. chop into pieces and put in a mixie or grate it using a clean grater.
  5. squeeze the pulp through a clean muslin cloth.
  6. heat the juice to boiling point and cool completly.

For the sugar syrup

  1. heat sugar ,water and citric acid,to boiling point,filter it through a muslin cloth and cool it to room temperature,


  1. mix the juice,sugar syrup,colour,essence together.
  2. mix the preservative in little warm water and add to the juice
  3. pour into sterlized, dry bottles leaving 1 inch head space.


  1. to serve add 1 part of juice to 3 parts of ice cold or ordinary
