paani puri

INGREDIENTS FOR MAKING PURI

  1. maida-100 gms(1 cup)
  2. chiroti rava-50 gms(1/2 cup)
  3. raw urad dhal flour-1/4 cup
  4. cooking soda-1/8 tsp(a big pinch)
  5. salt to taste(nearly 1/2 tsp)
  6. oil-for frying

METHOD

  1. sieve maida,add soda,urad flour,rava and makea stiff dough with water.
  2. keep aside for 30 minutes.
  3. pound well
  4. roll into small puris or roll into one chapathi,cut with a biscuit cutter
  5. deep fry in oil.

JEERA PANI

  1. pudina leaves-hand full
  2. corriander leaves-hand full
  3. green chillies-4

grind all together in a mixy,and sieve

TAMARIND JUICE

  1. tamarind -50 gms(1/2 cup) soaked in 1/2 cup water
  2. squeeze the juice

OTHER MASALAS

  1. jeera powder-1 tsp
  2. chat masala powder-1 tblsp
  3. black salt-1/2 tsp
  4. salt-1 tsp
  5. lemon juice-1 tblsp
  6. ginger juice-1 tsp
  7. citric acid-a pinch
  8. sugar-1 tblsp
  9. black pepper powder-1/4 tsp

METHOD FOR MAKING PAANI

  1. take 5 to 6 cups of water add jeera paani,tamarind juice,and masalas
  2. mix well
  3. chill for 30 minutes
  4. serve with puri

FILLING FOR PURI

  1. boil kabuli channa(soaked over night) or moong sprouts or boiled mashed pototes
  2. make a paste with 4 green chillies,1 onion,handfull of pudina and corriander leaves,a piece of ginger
  3. add the paste to one of the above boiled ingredient,add salt

serve making a hole in the puri fill the masala and fill with paani and serve immediately
