Orange Juice

Ingredients

  1. orange juice-1 1/2 cups or 1 litre
  2. sugar-2 1/2 cups or 1.700 gms
  3. water-1 cup or 1.300 ml
  4. citric acid-1 1/4 tsp or 6 tsp
  5. orange essence-1 tsp
  6. orange colour-1 pinch
  7. potassium meta bi sulphite-(K.M.S)-2 pinches

Method

  1. select ripe,juicy oranges.wash thoroughly.
  2. cut into 2 halves and extract juice.
  3. strain the juice to remove seeds using a clean and dry stainless steel strainer.
  4. measure the juice.
  5. prepare the sugar syrup by heating sugar,water,citric acid in a vessel ,to boiling point.
  6. cool down to room temperature.
  7. filter the syrup through a dry and clean muslin cloth to remove dirt.
  8. to this syrup add essence,colour,orange juice,mix well with a dry laddle
  9. dissolve K.M.S in 1 tsp of warm water and add to the juice.mix well.
  10. pour into sterlized ,dry bottles,leaving head space.cork and store in a cool and dry place or refrigerate.

To serve

  1. dilute 1 part of juice with 3 parts of cold water.
