Orange Juice
Ingredients
- orange juice-1 1/2 cups or 1 litre
- sugar-2 1/2 cups or 1.700 gms
- water-1 cup or 1.300 ml
- citric acid-1 1/4 tsp or 6 tsp
- orange essence-1 tsp
- orange colour-1 pinch
- potassium meta bi sulphite-(K.M.S)-2 pinches
Method
- select ripe,juicy oranges.wash thoroughly.
- cut into 2 halves and extract juice.
- strain the juice to remove seeds using a clean and dry stainless steel strainer.
- measure the juice.
- prepare the sugar syrup by heating sugar,water,citric acid in a vessel ,to boiling point.
- cool down to room temperature.
- filter the syrup through a dry and clean muslin cloth to remove dirt.
- to this syrup add essence,colour,orange juice,mix well with a dry laddle
- dissolve K.M.S in 1 tsp of warm water and add to the juice.mix well.
- pour into sterlized ,dry bottles,leaving head space.cork and store in a cool and dry place or refrigerate.
To serve
- dilute 1 part of juice with 3 parts of cold water.
