Lemon Juice

Ingredients

  1. lemon juice-2 cups or 1 litre
  2. sugar-2 1/4 cups or 2 1/2 kg
  3. water-1 3/4 cup or 1 litre
  4. lemon essence-1 pinch
  5. lemon yellow colour-1 pinch
  6. potassium meta bi sulphate(k.M.S)-2 Pinches

Method

  1. select ripe and juicy fruits,wash and dry it.
  2. cut into halves and squeeze out the juice.
  3. strain the juice to remove the seeds.
  4. prepare sugar syrup by heating sugar,water and a 2 tsp of lemon juice to boiling point.
  5. filter and cool the syrup to room temperature.
  6. add essence,colour,preservative(KMS-dissolved in little warm water ).mix well.
  7. pour into dry and sterlized bottles leaving head space.

To serve

  1. dilute the juice with 3 parts of cold water.

variation

lemon- barley juice

  1. lemon juice-2 cups 0r 1 litre
  2. sugar-1.5 kg
  3. water-1 litre
  4. k.m.s-3/4 tsp
  5. add 4 tsp of barley powder to the above recipe

++ method

  1. make a paste of the barley powder with little water and gradually add the entire quantity of water given to the paste.
  2. heat the barley solution till it becomes clear.
  3. then add sugar and a little lime juice for clarification.
  4. filter the syrup,cool and mix with the juice,add preservative and bottle.

lemon- ginger juice

  1. lemon juice-1 litre
  2. ginger grated-1/4 kg
  3. water-1 litre
  4. citric acid-1 tsp
  5. sugar-2.5 kg
  6. lemon essence-1 tsp
  7. k.M.S-1 tsp

method

  1. peel ginger ,grate and squeeze out juice.mix with lemon juice.
  2. prepare sugar syrup with sugar,water a,d citric acid.
  3. filter and cool
  4. mix the 2 juices
  5. add essence and preservative and bottle
