Lemon Juice
Ingredients
- lemon juice-2 cups or 1 litre
- sugar-2 1/4 cups or 2 1/2 kg
- water-1 3/4 cup or 1 litre
- lemon essence-1 pinch
- lemon yellow colour-1 pinch
- potassium meta bi sulphate(k.M.S)-2 Pinches
Method
- select ripe and juicy fruits,wash and dry it.
- cut into halves and squeeze out the juice.
- strain the juice to remove the seeds.
- prepare sugar syrup by heating sugar,water and a 2 tsp of lemon juice to boiling point.
- filter and cool the syrup to room temperature.
- add essence,colour,preservative(KMS-dissolved in little warm water ).mix well.
- pour into dry and sterlized bottles leaving head space.
To serve
- dilute the juice with 3 parts of cold water.
variation
lemon- barley juice
- lemon juice-2 cups 0r 1 litre
- sugar-1.5 kg
- water-1 litre
- k.m.s-3/4 tsp
- add 4 tsp of barley powder to the above recipe
++ method
- make a paste of the barley powder with little water and gradually add the entire quantity of water given to the paste.
- heat the barley solution till it becomes clear.
- then add sugar and a little lime juice for clarification.
- filter the syrup,cool and mix with the juice,add preservative and bottle.
lemon- ginger juice
- lemon juice-1 litre
- ginger grated-1/4 kg
- water-1 litre
- citric acid-1 tsp
- sugar-2.5 kg
- lemon essence-1 tsp
- k.M.S-1 tsp
method
- peel ginger ,grate and squeeze out juice.mix with lemon juice.
- prepare sugar syrup with sugar,water a,d citric acid.
- filter and cool
- mix the 2 juices
- add essence and preservative and bottle
