Koduballe

Ingredients

  1. rice powder- 4 cups
  2. maida(fried a little)-1 cup
  3. chiroti rava-1/4 cup
  4. hurigadale hittu- 1 handfull or 1 cup
  5. red chilles-40
  6. fresh coconut grated-1/2 holu(half)
  7. kobbari grated-1/2 cup
  8. curry leaves-few
  9. hing-1 tsp
  10. hot oil -4 big ladles or RG ghee-1 orange size
  11. salt-to taste

oil for frying

Method

  1. fry red chilles,curry leaves,hing with little oil grind along with little water to a smooth paste
  2. mix this paste with rice flour,maida,hurigadale hittu,and rava.
  3. mix well with hand
  4. add hot oil and mix well
  5. divide into 3 portions
  6. sprinkle water to 1st portion and knead the dough
  7. make small balls,and then roll out into koduble shape and join ends to form a circle
  8. deep fry in hot oil few at a time till crisp
  9. cool and store in air tight containers

VARIATION

Ingredients

  1. rice flour-2 cups
  2. chiroti rava-1/2 cup
  3. maida-1/2 cup
  4. coconut paste-100 to 200gms
  5. red chilli powder-1 tblsp
  6. hing -little
  7. jeera seeds-1/2 tsp
  8. salt-1 1/2 tsp
  9. hot oil or butter or RG ghee-50 gms

Method

  1. add hot oil or butter to the flour
  2. add remaining ingredients, make a soft dough
  3. prepare kodubale as mentioned above
