Kesar Badam Kulfi


  1. milk-6 cups
  2. khoya-100 gms
  3. sugar-12 tsps
  4. almonds-10 pieces
  5. kesar-6 to 8 strands
  6. pista-10 pieces
  7. cardamom-6
  8. kewra water or kewra essence-2 tsp
  9. vanilla custard powder or corn flour-3 tsp
  10. fresh cream-1 cup


  1. heat 5 1/2 cup of milk and add the khoya.
  2. keep stirring on low heat
  3. mix the corn flour or custard powder in 1/2 cup of milk,add to the milk mixture.
  4. keep stirring till the mixture is reduced to half
  5. soak the saffron in 2 tsps of warm milk and add to the milk mixture remove from fire
  6. blanch the almonds ,add almonds,pista,and the essence
  7. powder the cardamom and add to the milk remove from fire and add beaten cream
  8. cool and fill into chilled kulfi moulds
  9. freeze in the freezer to set
  10. before serving dip each kulfi mould in water and turn out into serving dish
