hakka noodles
INGREDIENTS
- noodles
- thinly sliced beans -300gms(6 beans)
- carrot shredded-1
- cabbage shredded-1 cup
- onion shredded-1
- spring onion stalk-1 cup
- bean sprouts-1 cup(optional)
- capsicum shredded-1 or 2
- chiili oil-1 tblsp
- red chillies broken-3 to 4
- green chillies chopped-4
- ginger garlic paste-1/2 tsp each
- soya sauce-1 tblsp
- tomato ketchup-1 or 2 tblsp
- salt-to taste
- ajinimoto-1 tsp
- white pepper powder- 1tsp
- oil-1/2 cup
METHOD
- boil noodles in lots of water with 1 tsp salt,1 tblsp oil for 3 minutes
- wash the noodles under cold running water
- drain well
- apply 1 or 2 tblsp oil and keep aside
- heat 1/4 cup oil in a kadai,fry noodles for 5 minutes till crunchy
- heat 1/4 cup oil in a kadai or pan,add onions,ginger garlic paste ,green chillies,red chillies,fry for a while
- add all the vegetables fry for a minute
- add chilli oil,add fried noodles,add soya sauce,tomato ketchup,salt,white pepper ,saute well in high flame
- serve with chilli sauce,chillies in vinegar,
TO PREPARE CHILLI OIL
- add 1 tblsp of sambar or rasam powder in 1/4 cup hot oil
- leave for 1 hour
- strain it
