Guava Jelly


  1. firm ripe guava fruit-6kg
  2. water-3 1/2 litre
  3. sugar-1 kg
  4. citric acid-1 1/4 tsp


  1. wash firm ripe guavas well.
  2. remove the stem portions,cut the guava into circular pieces(1/4" thickness).
  3. take the pieces in a vessel and cover them with water which should atleast 1/2"above the pieces.
  4. cook for 40 to 45 minutes for extraction of pectin in water ,keep stirring in between.
  5. filter through cloth and collect the extract.(it will be 1 litre)
  6. again keep the extract for boiling ,add sugar,citric acid .boil till honey colour is obtained.


dip a wooden laddle in the jelly,cool ,allow to drop.if sheet is formed jelly is ready(it will drop in "V" shape like gum)

  1. remove the top scum.
  2. fill the hot jelly in clean,wide mouthed bottles or jars upto the brim and leave it undisturbed to cool and set for 2 to 3 hours.
