Grape Juice


  1. grape juice or pulp-2 cups or 1 litre
  2. sugar-4 cups or 2 kg
  3. water-2 cups or 1 litre
  4. citric acid-1 1/2 tsp or 4 tsp
  5. tonovin essence(grape essence)-1 1/2 tsp
  6. rasberry red colour-powder(1 pinch) or liquid(1/4 tsp)
  7. sodium benzoate(SB)(preservative)-2 pinches or 1/4 tsp


  1. select fresh ,ripe juicy black variety grapes.
  2. seperate from the bunch and wash thoroughly ,keep in a perforated vessel for sometime for the water to drain completly
  3. take it in a vessel and crush it using wooden masher.
  4. place on fire and cook it in a reduced flame for 10 to 15 minutes
  5. remove from fire ,strain through a sieve or strainer,to remove seeds and skin ,when it is still hot.
  6. measure the juice,

For sugar syrup

  1. heat sugar ,water and citric acid together to boiling point(boil well)
  2. filter the syrup through a muslin cloth and cool it completly to room temperature

for syrup

  1. mix this syrup,juice,essence,colour and preservative (mixed with little warm water)together.
  2. fill in sterlized and dry bottles leaving 1 inch head space,cork and store in a cool place or refrigerate .

to serve

  1. dilute with 3 parts of ice cold or ordinary water
