Ghee Rice
ingredients
- basumathi or ordinary rice-1 cup
- water-2 cups
- mixed vegetables(carrot,green peas,beans,cauliflower,capsicum,onions(2),potato)-handfull each cut into 2'' long pieces
- pure ghee-3 to 4 tblsps
- cloves-2
- bay leaf-1
- dalchini-1'' piece
- jeera-1 tsp
- cardamoms-2
- pepper corns-3 to 4
- cashew nut-6
- lemon-1
- curry and corriander leaves-few
method
- wash rice
- heat ghee in a pressure cooker
- add cloves,bay leaf,dalchini,jeera,cardamom,pepper,cashew nuts,fry for a minute
- add vegetables fry for 5 minutes
- add rice,fry for a while
- add water,salt when its start boiling ,close the cooker lid
- pressure cook for 10 to 12 minutes or till done
- add lemon juice ,garnish with corriander leaves
- serve hot with raitha
