Fruit Cake
ingredients
- maida-2 cups
- butter-2 cups
- powdered sugar-1 cup
- eggs-4
- salt-a pinch
- 1 tsp -cinnamon powder
- vanilla essence-1 tsp
- baking powder-1 tsp
- cornflour-3 tblsp
- tutti fruitty-2 cups
- nuts-2 cups
- raisins-1 cup
- cherries-2 cups
- finely grated orange rind or lemon rind-2 tsp
- orange or lemon juice-1 tblsp
- blanched almonds-1/2 cup
temperature-150*c
method
- place butter and vanilla essence in a bowl ans beat until light and fluffy.
- gradually add sugar,beating well until mixture is creamy.
- add eggs one by one,beating well after each addition.
- sift maida,cornflour,salt,baking powder,cinnamon powder together and fold into the butter mixture.
- stir tutti-fruitty,nuts,raisins,cherries,orange rind and orange juice.
- pour the batter into a buttered and floured baking cake tin
- decorate top of cake with blanched almonds,arranged in circles,
- and bake for 2 to 3 hours or until springs back when touched lightly with finger tips
- set aside to cool in tin before turning out.
