Fruit Cake

ONE TYPE

Ingredients

  1. maida-2 cups
  2. butter-2 cups
  3. powdered sugar-1 cup
  4. eggs-4
  5. salt-a pinch
  6. 1 tsp -cinnamon powder
  7. vanilla essence-1 tsp
  8. baking powder-1 tsp
  9. cornflour-3 tblsp
  10. tutti fruitty-2 cups
  11. nuts-2 cups
  12. raisins-1 cup
  13. cherries-2 cups
  14. finely grated orange rind or lemon rind-2 tsp
  15. orange or lemon juice-1 tblsp
  16. blanched almonds-1/2 cup

temperature-150*c

Method

  1. place butter and vanilla essence in a bowl ans beat until light and fluffy.
  2. gradually add sugar,beating well until mixture is creamy.
  3. add eggs one by one,beating well after each addition.
  4. sift maida,cornflour,salt,baking powder,cinnamon powder together and fold into the butter mixture.
  5. stir tutti-fruitty,nuts,raisins,cherries,orange rind and orange juice.
  6. pour the batter into a buttered and floured baking cake tin
  7. decorate top of cake with blanched almonds,arranged in circles,
  8. and bake for 2 to 3 hours or until springs back when touched lightly with finger tips
  9. set aside to cool in tin before turning out.

SECOND TYPE

Ingredients

  1. maida-200gms(2cup)
  2. corn flour-2 tblsp
  3. powdered sugar-200 gms(1cup+1/3 cup)
  4. butter-250 gms
  5. baking powder 1 1/2 tsp
  6. caramel syrup-50 ml
  7. eggs-6

marination for 7 days

  1. raisins,cherries,cashew nuts,orange peel-25 gms
  2. tutti-fruity,badam,pista,chopped fruits-total -300 gms
  3. cocoa powder-2 tblsp
  4. rum or orange juice-2 tblsp
  5. mixed fruit jam-2 tblsp
  6. mixed spices(cinnamon,cloves,cardamom)-2 tsp
  7. mix all the ingredients,stir everday once

Method

  1. sieve maida,corn flour,baking powder thrice,
  2. cream butter and sugar to light and fluffy
  3. add egg one by one with essence,add caramel
  4. add sieved maida ,beating all the time.
  5. add soaked fruits with 2 tblsp maida coated
  6. pour to a greased tin
  7. bake at 180*c for 40 minutes or till done.
