cream of tomato soup

Ingredients

  1. tomatoes-1kg
  2. carrot-2
  3. red mooli-2
  4. onions-2

Method

  1. cut tomatoes into small pieces,chop other vegetables.
  2. in a pressure cooker take all the vegetables cover with 3 1/2 cups water.
  3. pressure cook for 5 minutes ,after 2 to 3 whistle switch off,cool it.
  4. make puree by putting it in a mixie and strain and keep aside.

WHITE SAUCE-butter-2 tblsp,maida-2 tblsp,milk-1 1/2 cups

Method

  1. in a kadai add butter,when it melts add maida fry for 1 to 2 minutes,and add milk gradually stirring all the time.
  2. Add white sauce to the tomato puree adjust salt,pepper, sugar ,tandoori colour(optional).

SERVING

  1. in each bowl put 2 small fried croutons(bread pieces)and soup,garnish with parsley or corriander leaves,dash of fresh cream and serve hot.
