Chutneys For Pani And Masala Puri

ingredients

green chutney(pani)

  1. pudina(mint)leaves-1 cup
  2. corriander leaves-1 cup
  3. green chilles-4
  4. ginger grated-1 tsp
  5. jeera-1/2 tsp
  6. black pepper-1/2 tsp
  7. powdered kala namak(black salt)-1 tsp
  8. ordinary salt-to taste
  9. tamarind-marble sized(soaked in water)

method

  1. grind the ingredients together to smooth paste with minimum water
  2. strain and keep
  3. just before serving take the desired quantity and dilute with water as per taste

sweet chutney

  1. tamarind-lemon sized(soaked in water)
  2. grated jaggery- 5 tblsps
  3. seedless dates-5(soaked and cooked in water)
  4. chat masala powder-1 tsp
  5. salt-1 tsp
  6. red chilli powder-1/4 tsp

method

  1. grind all the ingredients to smooth paste
  2. strain and boil for few minutes till it becomes thick sauce

note

both the chutneys can be preserved in refrigerator for 2 to 3 days
