Christmas Cake
ingredients
- seed less dates-1 cup
- pineapple-1/2 cup(chopped into large pieces)
- apricots-1/2 cup(chopped into large pieces)
- red glace cherries-1/2 cup
- green cherries-1/2 cup
- blanched almonds-1/2 cup
- raisins-1/2 cup
- prunes-1/2 cup
- eggs-2
- brown sugar-1/2 cup
- vanilla essence-1 tsp
- rum or fruit juice-2 tblsp
- butter-1/4 cup
- maida-1/2 cup
- baking powder-1/2 tsp
- salt-a pinch
method
- mix all the fruits,reserving 1/2 cup for the topping
- beat eggs until light and fluffy,then add sugar,vanilla essence,rum or fruit juice,and softened butter
- continue beating until well blended
- sift maida,salt and baking powder together add with the fruits mix ,mix thoroughly
- pour into a greased and buttered cake tin,spread evenly,sprinkle a reserved fruit and nuts on top ,pressing down gently
- bake in a slow oven for about 1 1/2 hours or until cake is firm to touch
- allow to cool in tin for 10 minutes
