Chocolate Ice Cream
Ingredients
- milk-31/2 cups
- fresh cream-250ml
- sugar-9tblsp
- drinking chocolate-1/4 cup
- cocoa powder-2tblsp
- instant coffee powder-1/4 tsp
- milk powder-4tbls
- CMC and GMS-1 tsp each
- chocolate colour and chocolate essence- few drops(optional)
- extra milk-1/4 cup
Method
- dissolve CMC and GMS in one cup water and cook till it looks like starch and cool.
- heat 3 cups milk and cook for 5 minutes
- in rest 1/2 cup milk dissolve sugar and milk powder ,add to the boiling milk and cook for 5 minutes.
- now add cooled GMS and CMC paste with liquid glucose ,cook till thick.
- and in another 1/4 cup of milk,mix cocoa,drinking chocolate,coffee powder
- add these mixtures to the above ,mix well,stirring constantly,when its starts boiling ,take out from fire.
- cool the mixture,add colour and essence
- pour into the ice cream box,and freeze for 8 hours at highest temperature
- take out and beat little at a time
- lastly add cream ,beat slowly.
- ,beat thoroughly,and keep in the freezer to set at medium temperature.
- cover box with cling film or plastic sheet.
