Chocolate Ice Cream


  1. milk-31/2 cups
  2. fresh cream-250ml
  3. sugar-9tblsp
  4. drinking chocolate-1/4 cup
  5. cocoa powder-2tblsp
  6. instant coffee powder-1/4 tsp
  7. milk powder-4tbls
  8. CMC and GMS-1 tsp each
  9. chocolate colour and chocolate essence- few drops(optional)
  10. extra milk-1/4 cup


  1. dissolve CMC and GMS in one cup water and cook till it looks like starch and cool.
  2. heat 3 cups milk and cook for 5 minutes
  3. in rest 1/2 cup milk dissolve sugar and milk powder ,add to the boiling milk and cook for 5 minutes.
  4. now add cooled GMS and CMC paste with liquid glucose ,cook till thick.
  5. and in another 1/4 cup of milk,mix cocoa,drinking chocolate,coffee powder
  6. add these mixtures to the above ,mix well,stirring constantly,when its starts boiling ,take out from fire.
  7. cool the mixture,add colour and essence
  8. pour into the ice cream box,and freeze for 8 hours at highest temperature
  9. take out and beat little at a time
  10. lastly add cream ,beat slowly.
  11. ,beat thoroughly,and keep in the freezer to set at medium temperature.
  12. cover box with cling film or plastic sheet.
