Carrot Nuts Cake


  1. maida-1 1/2 cup
  2. baking powder-1 1/2 tsp
  3. salt-a pinch
  4. butter-3 oz or 1/4 cup
  5. powdered sugar-1/2 cup
  6. eggs-2
  7. milk-1/4 cup
  8. grated carrot-1/2 cup
  9. chopped walnuts-1/4 cup
  10. chopped almonds-1/4 cup
  11. chopped glace cherries-1/4 cup


  1. sift together maida,baking powder,salt,
  2. beat together butter and sugar until creamy,add the eggs,1 at a time,beating well after each addition
  3. add maida mix alternately with the milk ,beating all the time.
  4. add the carrots,walnuts,almonds,and cherries,
  5. beat with a wooden spoon until thoroughly mixed
  6. pour into a buttered cake tin,spread evenly,and bake in a moderate oven for 40 to 45 minutes or until done when tested
  7. leave in tin for 5 minutes and then carefully turn out.
