Butter Scotch Ice Cream
Ingredients
- milk-2 cups
- fresh cream -2 cups
- milk powder-2 cups
- CMC and GMS -1 tsp each
- liquid glucose-1 tblsp
- vanilla essence-1/4 tsp
- pineapple essence-1/4 tsp
- powdered sugar-1/2 cup
- walnuts-1/2 cups
- lemon colour-3 drops
Method
- dissolve cmc and gms in 1 cup water and cook till it looks like starch and cool
- dissolve milk powder in cold milk and keep it to boil,add sugar ,cook on low heat stirring constantly
- now add cooled GMS and CMC paste with liquid glucose.
- when it thickens remove from fire and cool completly
- add ESSENCES,beat thoroughly
- freeze for 8 hours
- remove and beat again and add fresh cream,beat slowly,add walnuts very lightly and keep it in the freezer to set
- freeze until firm
