Butter Scotch Ice Cream


  1. milk-2 cups
  2. fresh cream -2 cups
  3. milk powder-2 cups
  4. CMC and GMS -1 tsp each
  5. liquid glucose-1 tblsp
  6. vanilla essence-1/4 tsp
  7. pineapple essence-1/4 tsp
  8. powdered sugar-1/2 cup
  9. walnuts-1/2 cups
  10. lemon colour-3 drops


  1. dissolve cmc and gms in 1 cup water and cook till it looks like starch and cool
  2. dissolve milk powder in cold milk and keep it to boil,add sugar ,cook on low heat stirring constantly
  3. now add cooled GMS and CMC paste with liquid glucose.
  4. when it thickens remove from fire and cool completly
  5. add ESSENCES,beat thoroughly
  6. freeze for 8 hours
  7. remove and beat again and add fresh cream,beat slowly,add walnuts very lightly and keep it in the freezer to set
  8. freeze until firm
