Basic Butter Cake


  1. maida-1 1/2 cups
  2. powdered sugar-3/4 cup
  3. butter-1/2 cup
  4. baking powder-1 1/2 tsp
  5. vanilla essence-1 tsp
  6. milk-1/2 cup
  7. eggs- 2

temperature-180*c or 350 *f


  1. beat together butter and vanilla essence in a bowl,until light and fluffy.
  2. gradually add sugar ,beating well all the time.
  3. add eggs one at a time,beating well after each addition.
  4. sift maida and baking powder together.
  5. pour flour mixture and milk alternately,into butter mixture.
  6. pour batter into a buttered and floured cake tin,bake till done or when it leaves the sides of the tin or is springy to touch.
  7. allow cake to stand in tin for 5 minutes,before turning onto a wire rack to cool completly.
  8. when cold do icing of your choice.


can add raisins to the above mixture

tutti-fruity cake

add 1/2 cup of tutti fruity pieces to the above mixture

chocolate cake

mix 1/4 cup melted chocolate into the basic cake mixture,before adding flour mixture and milk
replace 2 tblsp maida with 2 tblsps cocoa powder.

coffee cake

replace vanilla essence with 1 tblsp instant coffee powder dissolved in 1 tblsp boiling water.
cool and then add to butter when beating.

coconut cake

replace vanilla essence with 1/2 tsp coconut essence(optional) and add 1/4 cup desiccated coconut to flour mixture

banana cake

omit milk from recipe.
add 3 small ripe mashed bananas to the butter and egg mixture.
sift maida ,baking powder and 1 tsp soda and fold into banana mixture
