Alu Paratha
ingredients
- alu(potatoes)-4 to 5
- green chilles-6to 7
- jeera-1/2 tsp
- ginger- garlic paste-1/2 tsp
- garam masala powder-1/2 tsp
- onions-2 to 3
- finelly cut coriander and curry leaves-3 tblsp
- red chilli powder-1 tsp
- haldi powder-1 tsp
- oil-for frying
- salt-to taste
ingredients for making dough
- wheat flour-2 cups
- maida-1/4 cup
- butter or oil-1 tblsp
- salt to taste
++ method
- mix both the flours together in a basin,add salt,oilor butter,mix well
- add water and knead to a smooth dough
- keep for some time
for the stuffing
- cook alu,peel and mash or grate it
- heat oil add jeera,green chilles ,add ginger garlic paste,onions fry for a minute
- add turmeric powder,garam masala powder,red chilli powder,fry for a minute
- add coriander and curry leaves
- let the mixture to cool completly
method for making parathas
- make medium sized balls from the dough
- flatten the ball,and keep a tablespoon of filling inside and close and seal well all around
- roll out into thick paraths
heat tava,fry the paraths using oil for both the sides
serve hot
2nd method for making parathas
- take one ball from the dough,roll out into thin paratha,make another one of the same size
- place a tblsp of filling on the middle of one paratha,spread it leaving 1/4 "gap all around
- keep another paratha on top,using little water carefully seal both the chappathis all around
- sprinkle flour and roll again into big parartha care fully
- fry on hot tava adding oil
